Gajar ka Halwa (carrot pudding)

Gajar ka halwa is a beloved family dessert, especially during festive seasons, when its rich flavors and warmth bring everyone together. My mother-in-law always looks forward to it, and it’s become her favorite thing I make. The sweet, slow-cooked carrots, paired with the creamy condensed milk and cardamom, make it an irresistible treat that holds a special place in our celebrations.
PREP TIME: 15 minutes l COOK TIME: 45 minutes l TOTAL TIME: 1 hour
Ingredients:
5lbs of loose carrots
2 can of condensed milk
2 cans of badam drink
1 can of evaporated milk
1/2 cup of vegetable oil
1 cup dry fruit, I prefer sliced almonds but you can mix in anything you like!
Directions:
Wash, peel and cut down carrots into pieces that will fit into your food processor. (If you intend to shred the carrots by hand, keep them whole).
Shred all the carrots and add to a large ceramic or non-stick pot with 1/2 cup of vegetable oil.
Begin to cook down the carrots on medium heat, while stirring consistently.
Once the carrots have reduced down to half the size, add in all the canned liquids.
Continue to cook down on medium heat, stirring constantly so the milk doesn’t stick.
Be careful while stirring as the milk can splatter on you due to the consistency of the mix.
When all the liquid has dried up, allow mixture to cool before serving.
Topped with toasted coconut, pistachios and dried rose petals.
