Spicy Peruvian Style Green Sauce

This recipe is 100% driven by my husband’s love for sauce on EVERYTHING HE EATS, and I mean everything. When we dated, we use to go to a place called Pio Pio in Queens (NY) at-least twice a month and without fail we would order MORE SAUCE for the table before our food even got to us because we knew one little bowl wasn’t going to cut it! Our order was always very consistent at Pio Pio: chicken fried rice, maduros (sweet plantains), half roasted chicken and tons of green sauce; we would almost always take extra sauce home incase I made fried rice that week. One night I was making fried rice and much to my husband disappointment, we didn’t have any green sauce, so I decided I’m going to make my own version of this and that is how this recipe came out. This sauce taste good on anything and everything , I promise.

PREP TIME: 5 minutes l COOK TIME: 0 minutes l TOTAL TIME: 5 minutes

Ingredients

  • 1 tablespoon olive oil

  • 1 bunch fresh cilantro

  • ¼ cup of mayo

  • 2 teaspoons lime juice, about ½ a lime

  • 1 jalapeno, cut in half and seeded if you don’t want it too spicy

  • 1 thai chili (skip if you don’t want it too spicy)

  • 2 cloves of garlic, smashed

  • 1 teaspoon salt, add more to your taste

Directions

  1. In a blender add in cilantro, mayo, lime juice, jalapeno, thai chili, garlic and salt and let it run until smooth consistency.

  2. Stream in 1 tablespoon of olive oil after the rest of the ingredients are blended together for a creamier texture. If the sauce seems too thick, you can add a teaspoon or two of water as well.

Serve with fried rice, dumplings, or even just plain tortilla chips!
