Pina Colada (Cocktail & Mocktail Version)

Pina Coladas are a drink that take me back to being a kid and getting to order something special at Applebee’s on a family night out. The MOCKTAIL version of this CLASSIC COCONUT DRINK was my gateway into trying mixed drinks and to this day, I still order them as a mocktail when I go out. A PINA COLADA for me is not about having an alcoholic drink, it’s about me enjoying a sweet, slushy, TROPICAL PICK-ME-UP. The recipe I created has an ADULT-FRIENDLY version with alcohol but I’ve also created a mocktail version that you can make with your KIDS and enjoy.

Ingredients

  • 2 oz white rum, Malibu is recommended

    • 4oz if you replace the pina colada mix for cream of coconut

  • 3 oz 1010 Pina Colada Mix

    • you can substitute with cream of coconut if you can’t find the pina colada or want a mocktail version

  • 3 oz Dole pineapple juice

  • 2 oz Swad mango juice

  • 1 teaspoon sugar

  • ½ teaspoon lime juice

  • 1 cup of ice, crushed

    • this is key for the right consistency when blending so don’t forget to break up the ice a bit before adding it in

Garnish

  • pineapple slice or cherry

  • 1/4 cup toasted coconut flakes

Directions

Makes: 2 cocktails

  1. Dip glass lightly into water and then into toasted coconut flakes.

  2. Add in all the ingredients to the blender and blend for 30 seconds - 45seconds. Try not to overblend or the consistency won’t be right. The ideal consistency would be creamy, slushie, and on the thicker side.

  3. Pour into coconut rimmed glass.

GARNISH WITH PINEAPPLE SLICE AND ENJOY!
