Rose Mint Mojito

Mojitos are the perfect balance between sweet, sour and freshness, which makes them one of my favorite cocktails. Over the years, I’ve come to learn that making classic “simple” cocktails is always harder than drinks with bells and whistles. With only a handful of ingredients, most that are often on hand, my version of this cocktail takes the flavor up a notch and add a sensory touch with the scent of rose.

Pina Colada (Cocktail & Mocktail Version)

Pina Coladas are a drink that take me back to being a kid and getting to order something special at Applebee’s on a family night out. The MOCKTAIL version of this CLASSIC COCONUT DRINK was my gateway into trying mixed drinks and to this day, I still order them as a mocktail when I go out. A PINA COLADA for me is not about having an alcoholic drink, it’s about me enjoying a sweet, slushy, TROPICAL PICK-ME-UP. The recipe I created has an ADULT-FRIENDLY version with alcohol but I’ve also created a mocktail version that you can make with your KIDS and enjoy.

I fell in love with these CREAMY Chocolate Espresso Martinis at a local bar near my office and clearly had to find a way to make these at home. I decided best way to figure out this recipe is with friends so I asked a few girlfriends to come over and TASTE TEST this cocktail for me ALL NIGHT (dinner was served provided but not definitely not the priority of the night).
